Beloved Russian borsch, what a wonderful soup she is! Mine is completely vegan as typically it is cooked with a beef stock. However I have perfected this soup with just six ingredients. It boasts a shredded bounty of organic cabbage, carrot and beets. Heated up, on a cold day with a traditional dollop of sour cream is the best way to enjoy this.
